Try this veggie packed mac for a healthier version of the popular mac and cheese. Enjoy the satisfaction of a oven cooked pasta dish with the benefits of all the vegetables and wholemeal grains.
Prep Time: 40 Minutes
2 cups mixed vegetables (bell peppers, broccoli, cauliflower, onion, mushrooms, zucchini, shredded carrot or any other veggies you have on hand) cut into small cubes
1 Tbsp Extra Virgin Olive Oil
1 16 oz container ricotta cheese, full fat
½ cup parmesan cheese
2 cups cooked penne pasta, whole wheat
1 tsp dried oregano
1 tsp dried basil
1 tsp salt
1. Preheat oven to 375 degrees F.
2. In a skillet, sauté the vegetables and garlic in the olive oil until just tender.
3. In a large bowl, combine cheese, eggs, and seasonings. Blend well with a whisk. 4. Stir in your cooked vegetables and pasta until everything is coated with the cheese mixture.
5. Spoon into an 8×8 baking dish in bake for 20-30 minutes or until cheese is set and edges are golden brown.
