Total Prep Time: 10 minutes
2 Tbsp Tahini
1 Tbsp maple syrup
¼ tsp salt
3-4 cups of kale, ribs removed and sliced thin
1 lemon, juiced
½ cup vegetable chip mix
1. In a small bowl, whisk together the tahini, syrup, and salt.
2. In a large bowl, toss the kale in the lemon juice and massage in with your hands. Massage for 5 minutes to allow the fiber to break down.
3. Once the kale becomes soft and vibrant green in color, add the tahini mixture. Stir well to coat evenly. Dressed kale can be kept in refrigerator for 2 days in an airtight container.
4. Add the vegetable chips to the top and serve immediately
