Total Prep Time: 40 minutes
½ cup sweet potato, cooked and mashed with a fork before measuring
1 Tbsp coconut oil or grass-fed butter, melted
2 Tbsp Maple Syrup
1 ½ Tbsp cocoa powder
½ tsp baking powder
1/3 cup almond flour
Optional: 2 Tbsp chocolate chips
1. Preheat oven to 350 degrees F. Grease a bread tin.
2. In a food processor, combine sweet potato, eggs, syrup, and oil. Puree until smooth (about 1-2 minutes, scraping down bowl occasionally)
3. Combine the dry ingredients in a separate bowl. Add to the pureed mixture and stir until well incorporated.
4. Pour into bread tin and bake for 24-28 minutes. Cool completely before eating.
