A delicious breakfast or snack, these stewed apricots with coconut granola are packed with fiber, good fats and carbs. They will pick up your mood for sure!
Total Prep Time: 15 minutes
4 apricots, pitted and chopped into pieces
1-2 Tbsp water
1 Tbsp lemon juice
Honey to taste
1 cup coconut yogurt
½ cup coconut granola
1. In a saucepan, add apricots, water, lemon juice and honey (optional).
2. Bring to a simmer and cook until apricot skins have softened and you reach the desired thickness (the longer you simmer, the thicker the mixture will be).
3. Serve warm or cold with a scoop of yogurt and top with coconut granola.
