Here’s a recipe for an awesome spring salad with asparagus and goat cheese, featuring many of the seasons best produce! The dressing is a simple 2-ingredient way to add a lot of flavor to these spring greens!
Total Prep Time: 30 minutes
1 bunch asparagus, washed and sliced in half lengthwise
1/2 Tbsp olive oil
Salt and pepper to taste
1 bunch radishes, sliced thin
1 cup snow peas
1 small zucchini shaved into ribbons with a vegetable peeler
1 head red leaf lettuce, washed and chopped
1/4 cup pine nuts
4 oz goat cheese (or feta)
Zest from one lemon
2 Tbsp fresh lemon juice
2 Tbsp olive oil
1. Toss the asparagus in the 1/2 Tbsp olive oil, salt, and pepper.
2. Roast at 350 until barely tender.
3. In a large bowl repare salad ingredients and toss with dressing.
4. Top with warm asparagus and serve immediately.
