Spicy Citrus Fish Tacos

Make these spicy citrus fish tacos for brunch or any time throughout the day – you can play with the ingredients to make different variations and they are a healthy and delicious, easy to make meal!

Ingredients:

2 4oz salmon fillets
Citrus and Savory seasoning (or other favorite seafood seasoning) to taste
1/2 mango, diced
1 bell pepper
2-3 tomatoes
1 avocado
Juice of 1 lemon
1 tsp Cajun seasoning
2-4 whole grain corn tortillas
1 cup shredded purple cabbage

Directions:

On high heat, cook seasoned salmon in a covered, non-stick pan for 7 minutes or until salmon flakes when pulled with a fork. In small bowl mix next 5 ingredients. Once salmon is cooked layer purple cabbage, salmon, and avocado mixture on a warmed tortilla. Serve with an extra spritz of lemon.
