Saucy Eggs

Saucy eggs, or marinara eggs as some people call them, are a great way of varying your breakfast if you have eggs on a regular basis.

Serves: 2
Prep Time: 20 minutes


2 cups marinara sauce, homemade or low sugar variety if possible
2 eggs
Salt and pepper to taste
2 tbsp fresh parsley
Optional: crusty whole grain bread for serving


1. In a saucepan over medium heat, add the marinara sauce. Heat through.
2. Using a spoon, make two holes in the sauce and add an egg to each.
3. Season each egg with salt and pepper. Cover with a lid and “poach” egg in the sauce until done. Leaving them for 2-3 minutes will cook the white and leave the yolk runny, 4-5 minutes will cook the yolks through.
4. Garnish with fresh parsley and spoon onto crusty bread with parmesan for a quick and easy meal!
