Quinoa Stuffing

image2Quinoa stuffing is a great, gluten free dish for those guests who may need an alternative stuffing option!

Serves: 2
Prep Time: 25mins

Ingredients:

½ cup onion, chopped
½ cup carrot, chopped
½ cup celery, chopped
1 cup quinoa, rinsed well
2 cups chicken stock
¼ cup dried cranberries
1 avocado, sliced
Olive oil for drizzling

Method:

1. In a saucepan add vegetables, quinoa and chicken stock. Cover and simmer for 15 minutes.
2. Once tender, remove from heat, add the cranberries, cover with the lid and allow to sit another 5 minutes for cranberries to plump.
3. To serve add the avocado slices, and drizzle with a small amount of olive oil. Enjoy!
