Pesto Egg Sandwich

A simple and delicious pesto egg sandwich, great for breakfast or brunch.

Serves: 1
Prep time: 8 minutes

Ingredients:

2 slices of whole grain bread
2 tbsp pesto
1-2 slices of red onion
1 tomato, sliced
1 tsp avocado or extra virgin olive oil
1 egg
Salt and pepper to taste

Method:

1. Toast the two slices of bread.
2. Meanwhile, heat the oil in a saucepan and fry your egg leaving the yolk runny if desired.
3. Once the toast is done, add the pesto and layer the onion and tomato on the bread.
4. Add you egg and enjoy warm!
