This kiwi cucumber salsa is a healthy and tasty way of garnishing your salads, fish tacos, lettuce wraps and much more! Follow this simple recipe:

1 English cucumber
¼ cup red onion, chopped fine
1 jalapeno pepper, seeded and chopped fine
Juice of 1 lime
2 Tbsp fresh chopped cilantro
Sea salt to taste
*if kiwis aren’t quite ripe, 1-2 tsp of sugar may need to be added to balance the flavors
1. Combine all ingredients in a medium sized bowl.
2. Let sit for 1-2 hours in the refrigerator before serving with favorite chips, fish tacos, or lettuce wraps.
