Kale Winter Salad

image2Try this original and deliciously nutritious kale winter salad.

Prep Time: 25 minutes
Serves: 4

Ingredients:

1 bunch Kale
1 lemon, juiced
1 Tbsp Olive oil
½ cup radishes, sliced thin
1 persimmon, chopped
1 shredded or spiralized carrot
1 cup shredded red cabbage
½ cup toasted coconut
½ cup pine nuts

Dressing:

1 orange
1 clove of garlic
½ Tbsp apple cider vinegar
1 Tbsp maple syrup
Dash of olive oil
Pinch of salt

Directions:

1. Tear the kale leaves from the stem, wash and spend about 2-3 minutes massaging the leaves with the oil and lemon juice. The leaves will get more tender and turn a vibrant green.

2. Add other ingredients and toss with the dressing. To prepare dressing simply blend all ingredients together in a blender or food processor until smooth.
