Simply delicious and easy to make: ham and bean soup to warm up your winter days. Let it simmer overnight for extra taste.

20 oz of mixed beans (a 15 bean soup mix works great)
1 lb ham with bone
1 large yellow onion
2 cloves of garlic
8 cups of water
1 14 oz can diced tomatoes
1 lemon, juiced
1 tsp chili powder
Salt and Pepper to Taste
Optional Garnish: celery leaves
1.. Add the beans to a large bowl and cover with water. Allow beans to soak overnight or at least 8 hours.
2. Rinse beans and place in a large stockpot with the onion, garlic, ham (with bone), and water. Simmer for 3 hours.
3. Add the tomatoes, lemon and spices. Simmer for another hour before serving.
