This delicious grain-free cinnamon pecan bread is perfect for snacking and can be made ahead and refrigerated for a week. It is great for a lower carbohydrate breakfast option, add a little nut butter and a banana slice for a special treat!

1 cup pecans
½ Tbsp Maple Syrup
3 Tbsp Coconut Flour
¼ tsp baking soda
¼ tsp salt
¼ tsp cinnamon
1 Tbsp water if necessary to thin
1. Preheat oven to 350 degrees F.
2. Blend the pecans, eggs, and syrup in a food processor on high for 2-3 minutes or until smooth.
3. In a separate bowl add the coconut flour, baking soda, salt and cinnamon. Mix together and add the wet ingredients when ready.
4. Pour into a small, greased bread tin and bake for 25-30 minutes. Enjoy!
