Cowboy Caviar

Serves: 6
Total Time: 15 minutes


15 oz can of black beans, rinsed
1 cup frozen corn, thawed
½ cup celery, chopped fine
1/3 cup red onions, chopped fine
1 cup tomatoes, diced
½ orange bell pepper, diced
2 Tbsp fresh cilantro
¼ cup red wine vinegar
¼ cup extra virgin olive oil
½ tsp cumin
½ tsp salt
¼ tsp pepper
Red pepper flakes, to taste


1. Add all ingredients to a large bowl, mix well to blend.

2. Let sit for 1 hour, or more if desired to allow flavors to combine.

3. Serve with whole grain chips or toasted whole wheat tortillas.
