Dark Chocolate Bark

image2Skip the preservatives, processed oils, and wax coatings found in typical chocolate covered nuts and fruit and instead make your own dark chocolate bark! Rich in polyphenols, dark chocolate can be a great way to treat yourself, especially when paired with antioxidant rich fruits! This recipe comes together in less than five minutes and can be stored in an air tight container for snacking throughout the week.

Serves: 6
Prep Time: 5 active minutes, 10 minutes to harden


½ pack dark chocolate chips (60% min. cocoa content)
2 Tbsp raw almonds, chopped
2 Tbsp Coconut shavings
2 Tbsp pumpkin Seeds
2-3 dried apricots


In microwave safe bowl, melt the chocolate and for 1-2 minutes, pausing every thirty seconds to stir. Once completely smooth, spoon onto wax paper and shape into disks. While still melted, add the nuts and dried fruit of choice. Allow to cool (can be placed in the refrigerator) until chocolate hardens. Enjoy!
