Mint and Watermelon Salad

  • 2 cups watermelon, chopped into small cubes
  • ¼ cup feta cheese
  • Juice of 1 lime
  • 4-6 fresh mint leaves, sliced thin


1. Toss all ingredients together and serve immediately.

2. If wanting to make ahead, mix all but the cheese, refrigerate until serving. Once ready to eat, toss in the feta and serve.
