Armenian Lentil Stew

This dish uses many healthy pantry staples such as canned tomatoes, lentils, dried fruit, and wonderful herbs and spices! The flavor of this Armenian lentil stew is a little spicy and subtly sweet, perfect for a middle-eastern feel without being too strong.

Serves: 4
Prep Time: 50 minutes


1 cup dry lentils
5 cups vegetable stock
1/4 cup dried apricots
1 Tbsp avocado oil
1 bell pepper, chopped
1/2 onion, chopped
2 garlic cloves, crushed
1 14 ounce can diced tomatoes
1 Tbsp apple cider vinegar
1 Tbsp brown sugar
1 tsp salt
1/4 tsp Jamaican allspice
1/2 tsp cinnamon
1/2 tsp paprika
Optional garnish: plain Greek yogurt and fresh parsley


1. In a large saucepot, simmer first three ingredients for 30 min.
2. Meanwhile sauté peppers, onions, and garlic in oil.
3. Once done, add to cooked lentils. Next add tomatoes, spices and simmer another 20 min. S
4. Serve with a dollop of plain Greek yogurt and fresh parsley.
