Deliciously fresh and healthy bean salad – high in fibre and minerals like magnesium and potassium.

1 can of kidney beans, drained and rinsed
1 can of chickpeas, drained and rinsed
1 can of navy beans, drained and rinsed
2 stalks of celery, chopped
2 Tbsp. extra virgin olive oil
2 Tbsp. freshly squeezed lemon juice
1 handful of fresh cilantro, chopped
1. Simply add all ingredients to a large mixing bowl, and toss to combine.
2. Chill for 1 hour before serving.
